Featured Wine: Villa Toscano Estate Bottled Syrah
Even in winter many of us use our grills to give the food we enjoy the special flavors that only a grill can impart. If you enjoy standing rib roast (Prime Rib), you’ll love the steaks made from the same cut of beef. Each grill is different. Whether its gas, briquettes or open wood fire, you’ll want high heat for the searing and medium for the finishing. With good cuts of meat, simple marinades and recipes allow the wonderful flavor of the food to “show off” along with the wine.
Ingredients:
Put the first four ingredients in a gallon sized plastic zip-lock bag. Remove the steaks from the refrigerator. Rinse and pat dry. Place in the zip-lock bag and close. Shake to thoroughly coat the steaks with the marinade and set aside for half an hour for the marinade to work and to allow the steaks to come up to room temperature.
While the steaks are marinating, fire up your grill to full heat. Remove the steaks from the marinade. Wipe most of the oil from the steaks. Sear the steaks for about a minute and a quarter on each side over direct heat. Then move the steaks away from the direct heat. Reduce the temperature to medium by either moving the coals apart or turning off one or two of the burners. Close the grill and cook for 10 minutes. The internal temp should be 160 degrees for medium. Adjust to your preference.
Serve with baked potato, fresh greens and, oh yes, that lovely Villa Toscano Estate Bottled Syrah.
